Mustard Lime Chicken

Okay, this is one of our favorite recipes to eat during the week.  You can find the recipe at http://www.elanaspantry.com/ along with other great recipes.

Mustard Lime Chicken

1lb. skinless, boneless chicken breast
1/2 cup fresh lime juice
1/2 cup fresh cilantro, chopped
1/4 cup dijon mustard
1 tbsp. olive oil
1 tbsp. chili powder
1/2 tsp celtic sea salt
1/2 tsp pepper

  1. Combine lime juice, cilantro, mustard, olive oil, chili powder, salt and pepper in a food processor.
  2. Clean/rinse chicken and put inside a gallon ziploc bag (or container) along with the processed marinade.
  3. Cover and refrigerate for 15 mins to 6 hours (I've let it sit overnight in the fridge and it tasted awesome).
  4. Heat grill and cook 5-7 minutes per side until browned and cooked in the center.
  5. Enjoy!
