Bison Chili

We got this recipe from http://www.paleoplan.com/ and it has become one of our favorite "go to" meals each week. 

Bison Chili
1 TBS coconut oil
1.5 -1.75lb of ground bison (you can sub ground beef or venison)
1/2 Onion, chopped
2 1/2 cups celery, chopped
2 cloves garlic
1 12 oz. jar of salsa (any brand you prefer or make it fresh)
1 8 oz. can of tomatoes
2 tsp cumin
2 tsp chili powder
2 tsp thyme leaves
2 tsp sea salt
1/4 cup green chilis (optional)

Instructions
  1. Cook your onions, celery, and garlic over medium heat for about 3-4 minutes.
  2. Add your meat, cumin, thyme, and chili powder.
  3. Stir this while it cooks for 5 to 6 minutes.
  4. Pour in your salsa, tomatoes, and salt.
  5. Add a 1/4 cup of mild green chilis (optional)
  6. Let simmer for an hour.
We tend to not use the green chilis and it still tastes great!  Enjoy!
