Paleo Stuffed Mushrooms

Here is something new we tried tonight!  Tasted great and was very filling!

Ingredients:
25 medium sized mushrooms (or 18-20 large mushrooms)
1 lb. ground beef
1/2 white onion, chopped
1 egg
1/2 tsp. black pepper
1 tsp. salt
1 tsp. cooking sherry
1 tsp. worchesthire sauce
3 tbsp. water
3 slices of bacon (optional)

Instructions:
  1. Clean mushrooms by wiping them off and remove stems so that you can "stuff" them.
  2. Mix ground beef, onion, and egg together.
  3. Add black pepper, salt, sherry, worchestshire, water, to the beef mixture.
  4. Preheat the oven to 350 degrees.
  5. Line a large cookie sheet with parchment paper.
  6. Place the mushrooms on the cookie sheet.
  7. Divide the ground beef mixture between all the mushroom caps. Bake for 20 to 25 minutes or until the meat mixture is cooked throughly.
  8. While mushrooms are baking fry up bacon and cool so it is ready to crumble for the top of each mushroom. (Only had one piece, so I just topped a few and it was plenty)

Mushrooms just  before they hit the oven

The final product! YUM!
