Danielle is not a fan of cauliflower, but really loves the way we make this version of cauliflower rice. It really is more like potatoes than rice, so don't think you're gonna use this as a substitute for fried rice.
Thought we would share with everyone since this has become so popular in our house.
Ingredients
cauliflower (regular sized head)
olive oil (we used extra virgin)
Optional Ingredients
1 green onion
garlic powder (to taste)
ground pepper (to taste)
sea salt (just a dash)
cayenne pepper (just a dash)
Take your cut up cauliflower and microwave it for about 5 minutes. The cauliflower has a bunch of moisture built into it already, so no additional water is needed while you heat it in the microwave.
Once the cauliflower is tender from the microwave, take the cauliflower and put it into a food processor. We use the chop blade when we make this.
Pulse the cauliflower until you have the consistency of some mashed potatoes.
Using a pan, add your olive oil (1-2T) and one chopped green onion. Saute the green onion on medium heat to where you get that wonderful green onion aroma. Next, just add your cauliflower.
Once you've added the cauliflower to the pan, stir everything together. Next we add our seasonings to the cauliflower. We like to use garlic powder, a dash of cayenne pepper, ground pepper, and a little sea salt. If you're a green onion fan, I highly suggest you use them in this recipe. I've made them both ways and we love the green onion flavor. It really adds to the recipe while cutting down the cauliflower taste a little bit.
And there it is! My advice is to just play with the amount of garlic powder and pepper to get that good blend of what you like. I only used a dash of cayenne to make it have a little heat on the back end. Hope you enjoy! We're having it again this weekend with some steak!
