A week of transition

Here we are one week into our journey, and it has been better than expected.  Our first full day of paleo started on 1/3/11 and this was our first full week back into crossfit since the break.  Amazing how much better we both feel when we eat clean and get back to the workouts.  Our eating has been pretty poor over the last  month and a half.  No planning of our meals, and basically just consuming whatever we wanted.

This first week back on paleo went really smooth for us.  I know that we will need some help with the fine tuning of our eating, but overall I was pleased.  Our planning of meals has to get better as I found myself  "winging it" for several meals this week.  Planning is key, and it was what made us successful the last time we really dedicated ourselves to paleo back in April through the summer.  I will break down what we are basically eating during the day.  Remember we're a work in progress and we most likely will be changing things from time to time based on suggestions we receive.

Breakfast
Our breakfast is pretty simple.  We basically have two eggs and two pieces of bacon every morning.  Our workouts are at 5:00 a.m., so we do our best to eat as soon as  we get home.  We are usually eating between 6:30 a.m. - 6:45a.m.  Our eggs have been store bought lately, but we are trying to get some pastured eggs moving forward.  It has been a little hard getting them lately, but hopefully we might get some this week.  Our bacon is uncured and has no nitrates/nitrites.  We don't really stick to one brand, we tend to jump around.  Applegate farms makes some good bacon, and you can get it at HEB.  Danielle tends to do soft boiled, where I'm over easy kind of guy. I use a little hot sauce and I pepper our eggs.  We also drink a big glass of water with 1000 mg Emergen-C as well (we like raspberry flavor). We also take fish oil (2,000 mg), flaxseed oil (2,000 mg), and  a stress B complex. 

Both Danielle and I have a cup of coffee that we take with us to work.  We do use a sugar substitute and we use ground cinnamon as well.  We know that artificial sweetener is not paleo, so any suggestions would be appreciated (we need a little sweet in our coffee).


Lunch
Our lunch selection has a little more variety than our breakfast.  We tend to use leftovers from our dinner to help us with our lunches.  Leftovers definitely help us to get out of the house a little faster in the morning.  This week we did alot of cooked ham since we had a 9lb ham that we cooked.  Needless to say we're pretty hammed out right now.  This week we also did a mustard lime chicken along with the cooked hickory ham as our meat selection for our lunches.  We also accompanied our ham one day with cabbage that I cooked in coconut oil.  The other days we added a salad along with our meat selection.  Our salads are pretty basic: Spring mix or baby spinach, cucumber slices (with peel), cherry tomatoes, and salad dressing.  We love the brianna's dressings, especially the "new american".  Some days we will add either an egg or deli meat to our salads if we don't have another meat selection.  The deli meat we use has no nitrates/nitrites and is uncured.  Danielle tends to eat around 1:00pm and I tend to eat around 11:00am.  We do pack a couple snacks during the day to eat in between meals.  We usually use a power bar for one snack and either a fruit or nuts as the other.  For the fruit, Danielle usually does a half of an apple.  If I don't eat apple, I will rotate between pineapple (4 to 5 chunks) or a clementine orange.


Dinner
Some of the dinners we did this week were mustard lime chicken, steak, and of course, HAM.  :)  The veggies that we paired with our meat was either cabbage, a salad, or I had broccoli (D hates broccoli).  We did have steamed green beans one night, which I believe is not paleo (remembered after I ate them).  With our steaks I did sauteed mushrooms.  I hope to bring more variety to our meals in the weeks to come, but I was looking more for consistency this week with just getting them prepared.  After dinner, we had maybe 4 or 5 dark chocolate chips (made with 60% cacao) to give us something sweet.  Friday night we went to dinner with my parents to Genghis Khan (mongolian grill).  We did just the meat and veggies, no rice or noodles.  We used some sauce, but we just a little as we didn't know what was in them. 



In summary, we jumped on the scale this weekend and recorded our weight.  From eating clean from Monday through Friday, Danielle dropped 5.5 lbs and I dropped 6 lbs.  Besides the drop in weight, we just felt alot better day to day.  All in all, it was a pretty successful week and we're looking forward to what next week brings us.  Talk to you soon!  Bobby and Danielle
